Fresh Quinoa Chickpea Salad

That chickpeas are not vegetables but legumes? Legumes are the ripe, edible seeds of leguminous plants. They are extremely healthy because they contain a lot of protein, starch and iron. Therefore, legumes such as chickpeas are excellent meat substitutes.

What you'll need

For 2 Servings

  • 50 grams of chickpeas (fresh or canned)
  • 75 grams of quinoa
  • fresh spinach (cut into pieces)
  • ½ bell pepper
  • 8 cherry or sweet tomatoes
  • ½ cucumber
  • 1 spring onion*
  • for the dressing: garlic powder and lemon juice, salt and pepperoptional: parsley or dill

  • cutting board

  • bowl for the dressing
  • blender or food processor


How to make this Quinoa Chickpea Salad

  1. Cook the quinoa according to the packaging.
  2. Cut the fresh spinach, bell pepper, tomato, cucumber and spring onion into small pieces.
  3. Add the quinoa to a bowl and mix with the vegetables and chickpeas.
  4. Squeeze a lemon wedge over the quinoa and add a pinch of garlic powder.
  5. Season with salt and pepper and mix well.Garnish with parsley or dill if desired.

Quinoa can easily be stored. Cook extra quinoa, let it cool completely, and store it in an airtight container in the refrigerator. The next day all you have to do is add some fresh vegetables and your meal is ready! Preserve quinoa in the fridge for 4 days.
