Summer watermelon feta salad

Some combinations are gold. Like watermelon and feta: a match made in heaven. The sweetness of watermelon as a counterpart to slightly salty feta. Lemon and mint provice freshness. Crunchy pecans add a nice bite. A juicy, tasty and colorful party on your plate! With this salad you’ll taste summer.

Did you know... Feta has been eaten in Greece for thousands of years? Greeks still love it and they eat pounds of feta every year. Greek feta is made from sheep and/or goat cheese. The white color and crumbly structure are characteristic of this cheese. That's why feta is perfect for crumbling over a salad.

This is what you need for a watermelon feta salad

2 Servings
    • 20 grams of watermelon
    • rocket or mixed lettuce
    • 50 grams of black olives
    • 50 grams feta (light)
    • fresh mint
    • ½ cucumber
    • handful of unsalted, unroasted pecans
    • 1.5 tablespoons olive oil
    • half a lemon
    • salt and pepper

And this is what else you need

    • cutting board
    • knife
    • bowl for the dressing

How to make the recipe

  1. Cut the watermelon into thin pieces or chunks.
  2. Chop the olives and cut the cucumber into pieces.
  3. Chop the pecans roughly.
  4. Pour the olive oil into a bowl and squeeze out half the lemon. Mix together and season with salt and pepper.
  5. Spread the lettuce over the plates. Add the watermelon, olives and cucumber.
  6. Crumble the feta and nuts over the salad and garnish with a little mint. Serve the dressing separately. Bon appetit!

Feta is a dairy product. With this cheese you get calcium, amino acids and proteins. Feta is less fat than many other cheeses. Nevertheless, it is better not to eat too much of it and choose a light variant.
