You'll need

For 2 servings

  • 1 broccoli
  • 1 tablespoon of olive oil
  • 1 small onion*
  • 1 clove of garlic
  • 400 milliliters vegetable stock
  • 1 small potato
  • 2 tablespoons dairy spread or low-fat herb cheese
  • pinch of nutmeg
  • salt and pepper to taste
  • parsley to garnish

How to make Creamy Broccoli Soup

  1. Wash the broccoli and cut into florets. Peel the potato, cut into small cubes. Chop the onion and garlic finely.
  2. In a saucepan, warm the olive oil over medium heat. Add the onion and garlic, sautéing until translucent and fragrant.
  3. Toss in the broccoli and diced potato. Give them a good stir with the onions and let them get acquainted for a few minutes.
  4. Pour in the vegetable stock and bring the mix to a gentle simmer. Add a pinch of nutmeg and season with salt and pepper.
  5. Once the vegetables are tender, which should take about 15-20 minutes, take the pan off the heat. Using a hand blender, mix the soup until smooth.
  6. Ladle the soup into bowls, finish with a spoon of dairy spread or low-fat herb cheese. Garnish with a sprinkle of fresh parsley and your healthy bowl is ready to serve!
