How to make Scrambled Eggs with Cottage Cheese

  1. Cut a few basil leaves. Beat the eggs in a bowl.
  2. Mix the basil leaves with the eggs, cottage cheese, salt and pepper.
  3. Heat the rapeseed oil in a small frying pan and pour in the mixture.
  4. Let the eggs solidify for a few seconds over medium-high heat.
  5.  Using a wooden spoon or spatula, scoop through the mixture, pulling the eggs from the edge to the centre. Keep doing this until you get a firmer, semi-soft texture.
  6. Add smoked salmon (cut into small pieces) if you like. And your high-protein breakfast or lunch is ready!

Tip from our dietician Solenne

Eggs are the second most complete source of protein after whey protein. Additionally, eggs contain vitamins A, E, D, K and B12. They are also full of zinc, iron, selenium, and folic acid. So having eggs on the menu more frequently is a healthy choice.
