Summer Watermelon Feta Salad

Ingredients

2 Servings

  • 20 grams of watermelon
  • rocket or mixed lettuce
  • 50 grams of black olives
  • 50 grams feta (light)
  • fresh mint
  • ½ cucumber
  • handful of unsalted, unroasted pecans
  • 1.5 tablespoons olive oil
  • half a lemon
  • salt and pepper

  • knife
  • bowl for the dressing


How to make the recipe

  1. Cut the watermelon into thin pieces or chunks.
  2. Chop the olives and cut the cucumber into pieces.
  3. Chop the pecans roughly.
  4. Pour the olive oil into a bowl and squeeze out half the lemon. Mix together and season with salt and pepper.
  5. Spread the lettuce over the plates. Add the watermelon, olives and cucumber.
  6. Crumble the feta and nuts over the salad and garnish with a little mint. Serve the dressing separately. Bon appetit!
